Camillo Donati, Lambrusco IGT, 2016, Emilia-Romagna, Italy

The sparkling red wine is a full-bodied lambrusco, with a good structure. It is also excellent when aged.

The clone is Lambrusco Maestri. Mainly cultivated on the flat area for its characteristic ability to withstand dampness and mold and for its generous productivity, yet it turned out to be an excellent vine to be grown in the hills as well. Here, where its fertility is definitely lower and it cannot be watered, it is raised according to the Guyot system, with severe pruning (only 7/10 buds per fruiting arm), small yields but higher quality. The resulting wine is full-bodied lambrusco, with a good structure.

Wine maker - Camillo Donati

Grape Variety - Lambrusco Maestri 100%

Alochol - 13.50%

Food Match - Wagyu beef shabu-shabu, roasted duck and cold cuts. Traditionally paired with aged cheese like Parmigiano Reggiano and also pizza.
