I Pastini

The winery "the Pàstini" was born in 1996 and it is located in the heart of the earth Itria Valley. Winemaker Lino Carparelli managed the production of 12 hectares of vineyards with the aim to restore and enhance local grape varieties. For the reds, there are traditional Primitivo and the local grape Susumaniello, and for the whites, the Verdeca, Bianco d’Alessano and Minutolo, a white grape variety which confirms ancient wine production. 

Minutolo 'Rampone' IGP 2020

Tasting Note: 

The Rampone is a pure Minutolo, made from grapes grown in a restricted area of the Itria Valley. Called Minutolo for the berries small and fragile, a very delicate grape variety.


The Rampone has a bright straw yellow colour. On the nose is intense, revealing all the aromatic compounds of the Minutolo grape, with delicate fragrances of flowers and exotic fruits and a slightly spicy finish. The wine is fresh, balanced and with good acidity, expression of minerality mainly due to the chalky soils where it is grown.

Susumaniello 'VersoSud' IGP 2018

Tasting Note: 

Imported from neighbouring Dalmatia, Susumaniello is one of the most important indigenous varieties of Brindisi. Its name is due to the fact that the plant Susumaniello was once so particularly productive, so overloaded with grapes as if it were a donkey.


The name VersoSud (towards the south) is indicative of the position of the vineyards, located in the area to the south of the Itria Valley arriving in the territory of the province of Brindisi. VersoSud performs with an intense ruby red colour with a violet rim, it leaves the palate with hints of blackberry and cherry and sweet toasted notes. The taste is soft but persistent while remaining balanced.

Primitivo 'Arpago' IGP 2018

Tasting Note: 

The early ripening of the grapes from which the wine is obtained gives the name "Primitivo" (primitive). Originally from Croatia, the grape was imported and cultivated in the areas of Gioia del Colle, in the centre of Puglia, consequently spread out in the region.


The Arpago is a Primitivo grown in the territory of Taranto (extreme south) and shows a ruby red colour with violet hues that tend to become garnet with the ageing process, it has an intense and fragrant flavour with hints of blackberries reaching a harmonious taste and charm.

Minutolo Passito 'Elogio alla Lentezza' IGP 2017 

Tasting Note: 

This wine has been made almost for betting, working the bunches of ripe Minutolo left dried on the plant, the Elogio alla Lentezza(Eulogy to Slowness) need to forget for a moment who we are. Born as a meditation wine, when you drink it, you embark on a journey through memories and thoughts, tastes and flavours, trying to slow down for a moment from all that hustle and bustle of everyday life. The Elogio alla Lentezza has a bright yellow colour at times amber, while it is surprising to have intense aromas and a bouquet of flowers.
